Millets are the most consequential category in Indian food processing right now, and also the most technically awkward. The grain is small, the husk is tightly bound, and unless dehulling and conditioning are done properly the flour turns rancid in weeks because millet lipids oxidise fast. Getting shelf life out of a millet product is a processing problem before it is a packaging problem.

Our system produces millet flour, semolina and rava, grits, flakes and rice substitutes; ready to eat millet breakfast cereal, extruded snacks, cookies, energy bars, ladoo, chocolate products and mixtures; and ready to cook dosa, idli, upma, roti, porridge, khichdi, instant meal and pancake mixes. Combined with our extruders, this is the deepest millet capability we operate, and it is where our food technologists spend most of their development time.
